Gastronomic trends at the spa

Abstract:

The bachelor thesis deals with gastronomic trends in hotels in Slovakia. The aim is to find out the same trends in the field of catering in selected spa hotels and compare them with each other and compile a meal plan for a gluten-free diet. In the first part we will deal with the history of spas from ancient Greece through Rome and the Orient to the present. We will talk about the origin of spas in Slovakia, the importance of spas, wellness and forms of spa care. Then we move on to the history of gastronomy and catering services in spas, either in general or from the perspective of patients. The second part consists of a short presentation of selected spas and their hotels. In this section, we will look at selected diets and compare common trends in hotels. Finally, we will prepare a questionnaire survey. In the last part, we will suggest a varied weekly menu for one diet and possible improvement of trends.

Abstract:

Bakalárska práca sa zaoberá gastronomickými trendami v hoteloch na Slovensku. Cieľom je zistiť rovnaké trendy v oblasti stravovania vo vybraných kúpeľných hoteloch a porovnať ich medzi sebou a zostaviť jedálny plán pre bezlepkovú diétu. V prvej časti sa budeme zaoberať históriou kúpeľníctva od Starovekého Grécka, cez Rím a Orient až po súčasnosť. Povieme si o vzniku kúpeľníctva na Slovensku, o význame kúpeľov, wellnessu a formách kúpeľnej starostlivosti. Následne prejdeme k histórií gastronómie a stravovacích službách v kúpeľoch, či už všeobecne, alebo z pohľadu pacientov. Druhú časť tvorí krátke predstavenie vybraných kúpeľných miest a ich hotelov. V tejto časti sa pozrieme na vybrané diéty a porovnáme spoločné trendy v hoteloch. Na záver si spracujeme dotazníkové šetrenie. V poslednej časti navrhneme pestrý týždňový jedálniček pre jednu diétu a prípadné zlepšenie trendov.
