Abstract:
Tato bakalářská práce byla vytvořena jako literární rešerše zabývající se získáváním mléka a jeho dalším zpracováním. Popisuje technologii výroby konzumního mléka, a to včetně jednotlivých fází výroby. Dále porovnává složení kravského mléka s mlékem ovčím, kozím, mateřským a také srovnává výhody a nevýhody konzumace mléka s ohledem na lidské zdraví.

This thesis was created as a literary research and is dealing with milk production and its processing. It describes the technology of milk production that is presented in individual technological steps.
