Dietary Adequacy among the native Eskimo

Abstract:

Tato bakalářská práce zkoumá tradiční Eskymáckou stravu, její důležitost pro zdraví a celkovou pohodu původních Eskymáků a přechod této stravy směrem k západním stravovacím návykům. Tradiční Eskymácká strava se obecně skládá z mořských savců, hlavně tuleňů, mrožů a narvalů, suchozemských savců, jako jsou lední medvěd nebo karibu, ptáků, např. kachen, hus a bělokura horského, a malého množství rostlin a mořských řas. Využity jsou většinou všechny části zvířete, včetně masa, tuku, jater, střev, mozku, očí či ploutví. Eskymáci svoje jídlo připravují způsoby, které jsou jedinečné pro jejich kulturu. Zvířecí části jsou většinou konzumovány syrové, mražené, rozpuštěné, “shnilé” nebo zlehka povařené. Tyto metody zajišťují, že se velké množství glykogenu, rychlé formy sacharidů, která se rozkládá velmi rychle po smrti zvířete, uchová v masu, když je právě konzumováno. Z tohoto důvodu jedí Eskymáci své kořisti velice rychle po ulovení. Metoda hlubokého zmražení také uchovává podstatnou část glykogenu ve zvířecích částech, a “hnilobný” proces umožňuje fermentaci části bílkovin na sacharidy. Kromě obsahu sacharidů takto připravené jídlo Eskymáky zahřívá a dodává jim energii. Tradiční Eskymácká strava navíc poskytuje svým konzumentům velké množství základních živin včetně bílkovin, vitamínů A, C a D, vitamínů skupiny B, železa a fosforu, a zároveň zahání většinu nemocí. Změna stravy na vysoce rafinované potraviny s vysokým obsahem tuku a cukru má negativní vliv na zdraví a celkovou pohodu původních Eskymáků. Současná Eskymácká strava obsahuje značné množství bílého pečiva, mléčných výrobků, instantních jídel, limonád a cukrovinek, které je možno zakoupit v místních obchodech a jejich kvalita je často velmi nízká. Tato změna stravy u původních Eskymáků do značné míry přispěla k rozšíření obezity, cukrovky, rakoviny a zubního kazu, zatímco průměrná délka života těchto původních obyvatel arktických oblastí se výrazně zkrátila.

Abstract:

This bachelor thesis explores the traditional Eskimo diet, its importance for the overall health and well-being of the native Eskimo and the transition of this diet towards the western eating habits. The traditional Eskimo diet in general consists of marine mammals, such as seals, walruses and narwhals, terrestrial mammals, including polar bears and caribou, birds, such as ducks, geese and ptarmigan and small amounts of plants and algae. All the animal parts are usually used, including meat, blubber, liver, intestines, brains, eyes or flippers. The Eskimo traditionally prepare their foods in a way specific to their culture. The animal parts are usually eaten raw, frozen, thawed, “rotten” or lightly boiled. These methods ensure that large amounts of glycogen, which is the ready form of carbohydrates and degrades very quickly after the animal’s death, is still present in the meat. For this reason, the Eskimo often consume their catch very quickly after killing. The method of deep freezing also conserves considerable amounts of glycogen, while the process of “rotting” permits some proteins to ferment into carbohydrates. Besides the carbohydrate content, thus prepared foods make the Eskimo warm and supplied with energy. Furthermore, the traditional Eskimo diet provides its consumers with abundance of essential nutrients, including protein, vitamin A, C and D, B vitamins, iron and phosphorus, while such a diet wards off most diseases. The nutrition transition towards the high-fat, sugar-rich, highly-processed food impacts negatively the health and overall well-being of the native Eskimo. The modern Eskimo diet includes substantial amounts of white baked goods, dairy products, ready-made meals, pops and candies, which are obtainable from the local stores and are often of poor quality. This dietary shift largely contributed to the spread of obesity, diabetes, cancer and tooth decay among the Eskimo living mostly on non-native foods, while their life expectancy decreased significantly.
