Quality level of cafes in the chosen towns of Ústí region

Abstract:

Hlavním cílem naší bakalářské práce je mapování poskytovaných gastronomických služeb v oblasti vybraných měst a kaváren Ústeckého kraje. Zkoumání nabídky, kvalitu espressa a baristů, jako obsluhujícího personálu kaváren. A návrh, jak zlepšit nabídku kávy a přípravu espressa. V teoretické části jsme použili důvěryhodnou tuzemskou i zahraniční literaturu, včetně internetových zdrojů, jako zdrojů pro kvalitní zpracování pomyslné cesty kávového zrnka do šálku správně připraveného espressa. A současně shromáždili informace o vývoji kaváren, jejich prostředí, nabídce, espressu a baristovi. Na konci této části se nachází vymezení měst pro naši analýzu. Metody použité k vypracování analytické části s ohledem na danou problematiku, byly rozdílné. Logicko-historickým postupem jsme mohli pochopit vztah kávy a člověka, včetně vývoje její produkce. Aplikovali jsme analýzu a syntézu, pro důkladný pohled na výběrový soubor kaváren, komparativní analýzu pro vzájemné porovnání úrovně poskytovaných služeb a samotných kaváren. Pro sjednocení hodnotícího měřítka a zachycení výsledků v číselných hodnotách, jsme použili kontrolní list. Na základě těchto kontrolních listů a důkladné analýzy, jsme dospěli k závěru, že ze zkoumaných kaváren je nejlepší espresso v Caffe Moak na Lounsku a Pause café na Ústecku. Nejlepší nabídku zastává znovu Pause café, Obsluhující personál v teplickém McCafé, Caffe Moak a BeFeLeMe Coffe bar Teplice. V návrhové části jsme na základě jednoduché SWOT analýzy, podali návrhy a doporučení nejen na správný servis espressa ale i na její nabídnutí. Součástí byly i další postřehy, které umožní implementaci a praktické využití této práce pro praxi.

Abstract:

The main aim of this thesis is the mapping of offered food and beverage services in the area of selected towns and coffee houses in the Usti region. Further on a detailed analysis of the quality of offered coffee espresso and devoted bartenders as these coffee houses operations and waiting staff. We used trustful local and international sources in the theoretical part, including internet sources as theoretical source for a meaningful mapping notional “journey” from the coffee bean to your perfectly prepared cup of coffee. Besides this we also gathered data about the coffee houses development, their environment, offer and, its bartenders. At the end you may find the definition of selected towns to our analysis. There were different methods being used to prepare the analytical part with a focus to the processed theme. We were able to understand the relationship between man and coffee based on logical-historical method. We applied analysis and synthesis for a focused view on the selected group of coffee houses, comparative analysis to a collation of the offered services level and selected group of coffee houses themselves. We have used a control sheet to unify the measuring scale and to catch our results in numeric order. Based on these control sheets and a precise analysis, the result was, that the best coffee espresso is in the Caffe Moak in the region Louny and in the Pause café in the region Usti from the group of tested coffee houses. The best waiting staffs has been selected to the McCafe Teplice, Caffe Moak Louny and BeFeLeMe Coffe bar Teplice. Based on an easy SWOT analysis we offered in the proposal part recommendation on the right coffee espresso service and on the right offering methods. There were other observation made, that allows an implementation and practical use of this thesis in real life.
