Abstract:
V bakalářské práci je charakterizován akrylamid, procesní kontaminant a potenciální lidský karcinogen, a jeho vznik v potravinách během tepelné úpravy potravin. Také jsou popsány rizikové potraviny, u nichž se v průběhu tepelné přípravy předpokládá zvýšený obsah této látky, a možnosti snížení akrylamidu v těchto potravinách.
