Abstract:

Hlavním cílem této diplomové práce je využití poznatků data miningu do revenue managementu modelového podniku. Jsou zde analyzována data z prodejů pokrmů restaurace modelového podniku. Na základě získaných dat o těchto pokrmem je určení jejich postavení ve firmě na základě BCG matice. Dále je zde vytvořen poptávkový kalendář hotelu modelového podniku, který popisuje obsazenost hotelu v minulém roce 2016. Práce je dělena do tří částí. V prvním oddílu je zde probírán teoreticko-metodologický aparát, který slouží k pochopení daného tématu a na jeho základě je vytvořena druhá část. Druhá část práce je dělena do dvou hlavních výnosových středisek podniku – ubytování a stravování. U stravovacího střediska je vytvořena BCG matice všech pokrmů daného podniku a analýza vazeb mezi nimi. V poslední návrhové části jsou shrnuty výsledky z analytické části, provedeny návrhy a doporučení pro management podniku.

Abstract:

The main aim of this diploma thesis is to use the knowledge of data mining in the revenue management of the model enterprise. Data from sales of meals of a model enterprise restaurant are analyzed here. Based on the data obtained about these dishes, their position in the company is determined based on the BCG matrix. In addition, there is a demand calendar for the model business hotel that describes the occupancy of the hotel in the past year 2016. The work is divided into three parts. The first part discusses the theoretical and methodological apparatus, which serves to understand the subject and on the basis of which the second part is created. The second part of the thesis is divided into two main revenue centers - accommodation and catering. At the catering center, a BCG matrix is created for all the dishes of a given business, and an analysis of the links between them. In the last part of the thesis, the results from the analytical part are summarized, proposals and recommendations for the management of the company are made
