Bakalářská práce se zabývá vlivem typu a koncentrace želatiny na vlastnosti a stabilitu emulzí stabilizovaných celulózovými nanokrystaly. Tyto emulze představují slibné systémy pro praktické aplikace, zejména díky své biokompatibilitě a biodegradabilitě. Abstract:
The bachelor thesis deals with the influence of the type and concentration of gelatine on the properties and stability of emulsions stabilized by cellulose nanocrystals. These systems are promising for practical applications, mainly thanks to their biocompatibility and biodegradability.
