Abstract:

ROUPCOVÁ, Eva. Nástroje oživení prosperity podniku služeb. Diplomová práce Vysoká škola hotelová. Praha. 2019 Tato diplomová práce se zabývá problematikou podniků služeb potažmo jejich problémy, které mohou být způsobeny ekonomickými, politickými či ekologickými problémy. Teoretická část stručně popisuje základní problematiku daného tématu. Analytická část je rozdělena do dvou částí. V první části je provedena PESTLE analýza. Druhá část je zaměřena na analýzu fiktivního gastronomického podniku, který se nachází v centru města Plzně. Je zde provedena analýza jídelního lístku pomocí metody menu Engineering, dále je provedena analýza zákazníka a jsou zde uvedeny mzdové náklady na zaměstnance. V analytické části je dále řešena návštěvnost podniku a v návaznosti pak rozložení konkurenčních podniků v centru města. Na příkladu konkrétního podniku je uvedena aktuální situace a jsou zde analyzovány problematické oblasti. V návrhová části jsou následně uvedeny oživovací nástroje, které vycházejí z analýzy konkrétního podniku, ale jsou formulovány i k obecnému využít.

ROUPCOVÁ, Eva. Tools to revitalize prosperity of businesses and service. Master’s Dissertation. The Institute of Hospitality Management in Prague 8, Ltd. Prague 2019 This master’s dissertation deals with problems of service companies and their problems which can be caused by economic, political or ecological problems. The theoretical part briefly describes the basic problems of the topic. The analytical part is divided into two parts. In the first part is performed PESTLE analysis. The second part is focused on the analysis of a fictitious gastronomic enterprise, which is located in the city center of Pilsen. There is an analysis of the menu using the Menu Engineering method, the customer analysis is performed and the wage costs per employee are listed. The analytical part also deals with the attendance of the company and the subsequent distribution of competing companies in the city center. An example of a particular company shows the current situation and analyzes problematic areas. In the design part there are subsequently mentioned animation tools which are based on the analysis of a particular company but they are formulated and used for general purposes.
