Abstract:
Tato diplomová práce se zaměřuje na využití aktivních obalů v potravinářském průmyslu. Ze všech obalů, které je možné využít v potravinářském průmyslu, je zaměřena práce na chitosan. Tato látka je v práci detailně popsána a její použití v odvětví. Dále bylo v práci připravit roztok a vytvořit film chitosan-škrob. Byl vyhodnocen tvar filmů po vyjmutí z Petriho misky. This work focuses on the use of active packaging in the food industry. Of all the packaging that can be used in the food industry, the work is focused on chitosan.
