Customer-oriented management in West Bohemian and Bavarian gastronomy

Abstract:

This bachelor thesis deals with Management in Gastronomy and compares different and common elements of two chosen restaurants, that represent the Bavarian and West Bohemian region. The bachelor thesis is divided into two main parts - a theoretical and a practical part. In the theoretical part, there are first defined the terms Gastronomy and Management and further described management in gastronomy (the role of a manager, Quality Management, the form of offers and Marketing in gastronomy). To bring the two compared regions closer to the reader, the author also describes the Bavarian and West Bohemian gastronomy culture. A chapter focusing on trends and innovations in gastronomy brings up-to-date developments in this segment. For research there were used daily newspapers, magazines, books and internet sources in Czech, English and German language. In the practical part, the author chose two restaurants, where she used the information gained in the theoretical part and created interview questions based on that information, which she sent to the managers in advance. Based on the audio she transcribed the interviews and translated the Czech part into German. She created a simplified SWOT analysis for both companies. In the final step, the results of the SWOT analyses are being compared. Subsequently, common and different elements of restaurant establishments are identified from two points of view - in terms of the restaurant concept and in terms of the managerial role.

Abstract:

Tato bakalářská práce se zabývá managementem v gastronomii a srovnává rozdílné a společné prvky dvou zvolených restaurací, které reprezentují bavorský a západočeský region. Bakalářská práce je rozdělena do dvou hlavních částí - na teoretickou a praktickou. V teoretické části jsou nejprve definovány pojmy Gastronomie a Management a popsán management v gastronomii (role manažera, kvalitativní management, forma nabídek a marketing v gastronomii). Aby autorka srovnávané regiony čtenáři přiblížila, popisuje také bavorskou a západočeskou gastronomickou kulturu. Kapitola zaměřená na trendy a inovace v gastronomii přibližuje aktuální vývoj v tomto segmentu. K rešerši byl využit denní tisk, časopisy, knihy a internetové zdroje v českém, anglickém a německém jazyce. V praktické části si autorka zvolila dvě restaurace, přičemž využila nabyté informace z teoretické části a vypracovala na jejím základě otázky k interview, které manažerům předem zaslala. Audiozáznam těchto interview transkribovala a českou část přeložila do německého jazyka. Pro obě provozovny vypracovala zjednodušenou SWOT analýzu. V závěrečném kroku jsou výsledky SWOT analýz porovnány. Následně jsou identifikovány společné a rozdílné prvky restauračních zařízení ze dvou hledisek - z hlediska konceptu restaurace a z hlediska manažerské role.
