Phthalates in Meat at Sous-vide Thermal Treatment

Abstract:

Diplomová práce „Ftaláty v mase při tepelné úpravě sous-vide“ sleduje migraci ftalátů dibutyl ftalátu (DBP) a di-2-ethylhexyl ftalátu (DEHP) z obalů do vzorků mas, které byly tepelně opracovány metodou sous-vide. Bylo analyzováno 24 vzorků mas, a 24 vzorků obalového materiálu. Vzorky masa byly vakuově zabaleny do plastových obalů a tepelně upravovány při různých teplotách a dobách ohřevu (60 °C/4 hod, 60 °C/4+1 hod, 60 °C/8 hod, 60 °C/8+1 hod, 70 °C/4 hod, 70 °C/4+1 hod, 70 °C/8 hod, 70 °C/8+1 hod). Dále bylo analyzováno syrové maso a nepoužité obalové materiály na obsah DBP a DEHP. Koncentrace DBP ve vzorcích masa tepelně upravených při teplotě 60 °C se pohybovala v rozmezí 0,24–1,12 mg∙kg-1 původního vzorku a koncentrace DEHP mase při teplotě 60 °C byla v rozmezí 2,01–3,94 mg∙kg-1 původního vzorku. Koncentrace DBP v mase tepelně upraveném při teplotě 70 °C byla v rozmezí 0,36–0,66 mg∙kg-1 původního vzorku a koncentrace DEHP při 70 °C byla v rozmezí 1,27–3,12 mg∙kg-1 původního vzorku. Koncentrace DBP v obalových materiálech po tepelné úpravě 60 °C byla v rozmezí od 18,9–25,37 mg∙kg-1 plastu a koncentrace DEHP se pohybovala v rozmezí 4,18–5,02 mg∙kg-1 plastu. U teploty 70 °C byla koncentrace DBP v rozmezí 15,20–24,51 mg∙kg-1 plastu a koncentrace DEHP byla v rozmezí 3,58–6,19 mg∙kg-1 plastu. Průměrná koncentrace nepoužitých obalových materiálů se pohybovala u DBP v rozmezí 12,89–15,76 mg∙kg-1 plastu a koncentrace DEHP byla v rozmezí 2,71–5,33 mg∙kg-1 plastu. U syrového masa byla koncentrace DBP v rozmezí 0,44–0,69 mg∙kg-1 původního vzorku a koncentrace DEHP byla v rozmezí 1,35–3,41 mg∙kg-1původního vzorku.

Abstract:

The thesis entitled “Phthalates in Meat at Sous-vide Thermal Treatment” monitors migration of such phthalates as dibutyl phthalate (DBP) and di-2-ethylhexyl phthalate (DEHP) from packages to samples of meat products that were thermally treated by using the sous-vide method. Altogether 24 meat samples and 24 samples of packaging materials were analysed. The meat samples were vacuum-packed in plastic packages and thermally treated at different temperatures and warming times (60 °C/4 hours, 60 °C/4+1 hours, 60 °C/8 hours, 60 °C/8+1 hours, 70 °C/4 hours, 70 °C/4+1 hours, 70 °C/8 hours, 70 °C/8+1 hours). Besides, raw meat and unused packaging materials were analysed for the DBP and DEHP contents as well. The DBP concentration in the samples of meat thermally treated at a temperature of 60 °C oscillated within the range of 0.24–1.12 mg∙kg-1 of the original sample and the DEHP concentration in the meat at a temperature of 60 °C was within the range of 2.01–3.94 mg∙kg-1 of the original sample. The DBP concentration in the meat thermally treated at a temperature of 70 °C was within the range of 0.36–0.66 mg∙kg-1 of the original sample and the DEHP concentration at 70 °C was within the range of 1.27–3.12 mg∙kg-1 of the original sample. The DBP concentration in the packaging materials after thermal treatment at 60 °C was within the range of 18.9–25.37 mg∙kg-1 of plastic materials and the DEHP concentration oscillated within the range of 4.18–5.02 mg∙kg-1 of plastic materials. For the temperature of 70 °C, the DBP concentration was within the range of 15.20–24.51 mg∙kg-1 of plastic materials and the DEHP concentration was within the range of 3.58–6.19 mg∙kg-1 of plastic materials. The average concentration of unused packaging materials oscillated in the case of DBP within the range of 12.89–15.76 mg∙kg-1 of plastic materials and the DEHP concentration was within the range of 2.71–5.33 mg∙kg-1 of plastic materials. For raw meat, the DBP concentration was within the range of 0.44–0.69 mg∙kg-1 of the original sample and the DEHP concentration was within the range of 1.35–3.41 mg∙kg-1 of the original sample.
