Abstract:
V bakalářské práci je řešena problematika provozu restauračního zařízení. V práci je zpracován návrh na změnu stávajícího konceptu restauračního zařízení, který je na příkladu fiktivní restaurace uveden do provozu a po půlročním sledování zhodnocen. V práci jsou řešeny vnitřní ale i vnější faktory, které provoz restauračního zařízení ovlivňují. Důraz je kladen na fázi před znovuotevřením restaurace …moreAbstract:
The bachelor thesis is solved the problems of operation of restaurant equipment. The thesis developed a proposal the change of the existing concept of a restaurant, that is the exampl of the fictional restaurant put into operation and the concept is evaluated after six-month monitoring.
