Operation of Restaurant Equipment

Abstract:

V bakalářské práci je řešena problematika provozu restauračního zařízení. V práci je zpracován návrh na změnu stávajícího konceptu restauračního zařízení, který je na příkladu fiktivní restaurace uveden do provozu a po půlročním sledování zhodnocen. V práci jsou řešeny vnitřní ale i vnější faktory, které provoz restauračního zařízení ovlivňují. Důraz je kladen na fázi před znovuotevřením restaurace. V práci je uveden popis změn jednotlivých atributů, týkajících se zajištění provozu z hlediska prostorů, ve kterých jsou stravovací služby poskytovány, potřebného inventáře, nabídky, lidských zdrojů a marketingu, které je třeba k dosažení cíle provést. Za účelem dosažení cíle práce byly použity metody jako analýza konkurence, mystery shopping, kalkulace pokrmu a propočet prodejní ceny, komparativní analýza a především výpočet tržeb za období před změnou konceptu i po změně. Výsledkem práce je zjištění, že tržby v závislosti na změně konceptu soustavně dosahují částek až o polovinu vyšších než částky, kterých bylo dosaženo v přechozím období před provedením změn.

Abstract:

The bachelor thesis is solved the problems of operation of restaurant equipment. The thesis developed a proposal the change of the existing concept of a restaurant, that is the exampl of the fictional restaurant put into operation and the concept is evaluated after six-month monitoring. In the thesis there are addressed the internal as well as external factors, that affect operation of restaurant equipment. An emphasis is put on the phase before reopening of the restaurant. In thesis there is a description of changes in individual attributes which is relating to the operation in terms areas where catering services are provided, required inventory, offers, human resources and marketing, that needs to be done to achieve the aim In order to achieve the aim of this theses , mhetods were used such as an analysis of competitive, mystery shopping, calculation of the meal and calculation of selles price, comparative analysis, and particular the calculation of sales for the period before the change of concept and after the change. The main finding of the thesis is that the takings cosistently reach larger amounts up to the half response to the change of the concept than the amounts which was achieved in period before the making changes.
