Creation of the prosperous rural restaurant concept (pub)

Abstract:

Cílem bakalářské práce je vytvořit návrh konceptu prosperující venkovské restaurace (hospody) na základě sloučení služeb, především těch, které na venkově zanikají. Teoreticko-metodologická část se zabývá vymezením venkova, jeho funkcí a služeb, definováním pojmů spojených s podnikáním, definicí české gastronomie a kategorizací hostinských zařízení dle statistické metodiky EU. Na začátku analytické části je využita metoda PEST k analyzování vnějšího prostředí a zjištění rizik. Poté je analýza zhodnocena a jsou vybrána největší rizika, která mohou ovlivnit náš budoucí podnik. Další metodou využitou v práci je metoda řízeného rozhovoru, kdy jsou vybráni dva respondenti. Pro každého respondenta jsou připravené speciální otázky týkající se splynutí restauračního zařízení a pošty Partner. Otázky prvního respondenta jsou spíše obecného charakteru, druhý respondent už pak hodnotí splynutí v praxi. Po každém rozhovoru je provedeno shrnutí výstupů a jejich zhodnocení. Na závěr dochází k shrnutí obou výstupů a komparaci. Dle výstupů PEST analýzy, řízených rozhovorů a komparace bylo zjištěno, zda je splynutí pošty s restaurací a případně další služby výhodné. V návrhové části je pak představen návrh konceptu splynutí restaurace a dvou dalších služeb, které byly vybrány v souladu s předešlými výzkumy.

Abstract:

The purpose of the bachelor’s thesis is to create concept of the prosperous rural restaurant based on merge of services which mostly on villages are disappearing. The theoretical-methodological part deals with the definition of countryside, rural functions and services, entrepreneurship, Czech gastronomy and categorization of the gastronomy facility. PEST method is used on the beginning of analytic part to break down external environment and risks identification. Then the analysis is reviewed and the greatest risks that may affect our future enterprise are selected. As a next method there are prepared special questions regarding the merging of restaurant facilities and post Partner. Questions prepared for the first respondent are rather of a general character, the second respondent already evaluates the merger in practice. A summary of the outputs and their evaluation is made after each interview. In conclusion, both outputs are compared. On the basic of PEST analysis results, controlled interviews and comparison, it has been determined whether fusion of post with restaurants and possibly other services is beneficial. The draft section introduces the concept of merging a restaurant and two other services that have been selected according to previous research.
