Contemporary trends in teaching Confectionery Technology

Abstract:

V bakalářské práci řeším problematiku inovace a modernizace, soudobých trendů v cukrářské výrobě. Zabývat se tímto tématem jsem se rozhodla, jelikož se na trhu neustále objevují nové cukrářské pomůcky a výrobní technologie a výroba se modernizuje. Zabývám se stručnou historií cukrářské výroby, jelikož ta s inovací souvisí, ať už jen v otázce srovnání doby minulé se současnou. Dle svých možností rozeberu, zda a v jaké míře ulehčují cukrářské pomůcky samotnou práci studentům. Dalším cílem je, zpracovat některá témata z oblasti podpory zdraví, BOZP, hygieny a sanitace. Věnuji dostatek prostoru otázkám týkající se zdravého a bezpečného způsobu výuky a to v tématech manipulace s břemeny, nemoci z povolání a ergonomie.

Abstract:

In my Bchelor's Diploma Thesis I addresses the issue of innovation and modernization, contemporary trends in confectionery production. To deal with this issue, I decided, as the market constantly discovering new confectionery equipment and production technology and production is modernized. Deal with a brief history of confectionery production, since it is related to innovation, whether only the question of comparison of the past with the present. According to their possibilities will discuss whether and to what extent, ease the pastry aids students work alone. Another goal is to handle some topics of health promotion, health and safety, hygiene and sanitation. I dedicate ample space issues relating to the safe and healthy way of teaching and the topics load handling, occupational diseases and ergonomics.
