Small Breweries as a Part of Hospitality in the Czech Republic

Abstract:

Tato bakalářská práce se zabývá trhem malých pivovarů v České republice. Počet malých pivovarů na našem území každým rokem roste a jejich oblíbenost stoupá, proto jsou malé pivovary aktuálním tématem. Pro výzkum byly stanoveny dva cíle. Prvním cílem práce je objasnění příčin vzrůstajícího počtu pivovarů na území České republiky. Druhým cílem práce je zhodnocení přínosu ubytovacích služeb jako součásti malých pivovarů. Na základě zpracování získaných odpovědí bude v práci zodpovězena výzkumná otázka: „Jak významné je poskytování ubytovacích služeb pro malé pivovary?“ K výzkumu byla použita kvalitativní metoda sběru dat. Byly provedeny řízené rozhovory s dvanácti zástupci malých pivovarů v oblasti Krkonoš, Hradce Králové a Prahy. Práce se věnuje rozsahu služeb pivovarů v jednotlivých lokalitách, klientele, sezónnosti, důvodům vzniku malých pivovarů a hledá shodné a rozdílné znaky v odpovědích respondentů. Na základě dotazování je jako hlavní důvod rozvoje malých pivovarů určen zhoršený stav kvality piva z velkých korporátních pivovarů. Díky nízké kvalitě piva z velkých pivovarů začali zákazníci vyhledávat malé pivovary, které dodržují při výrobě piva tradiční postupy. Výsledky zkoumání dále ukázaly, že pivovary v horských lokalitách pro svůj provoz potřebují ubytovací služby mnohem více, než pivovary v centrech měst. V krkonošských malých pivovarech je ubytování využíváno hosty zejména při cestování za zimními a letními horskými sporty. Městské pivovary jsou na základě vyhodnocení dotazování hlavně součástí restaurací, ubytování spíše neposkytují.

Abstract:

This bachelor thesis is focused on the market of small breweries in the Czech Republic. The number of microbreweries in our country is rising every year steadily. Two goals where stated for this bachelor’s dissertation. Firstly, the research aims to study reasons for the rising number of microbreweries in the territory of the Czech Republic. The second goal of the thesis is to evaluate benefits of accommodation services as a part of small breweries. Based on gathered answers and a data analysis, the following research question will be answered: “How important is the provision of accommodation services for small breweries?” A method of qualitative form of data collection was used for the research. Twelve representatives of small breweries from the Giant Mountains, Hradec Králové and Prague regions were interviewed during controlled interviews about actual small breweries’ situation. Furthermore, this thesis evaluates the services of breweries in particular localities, seeks for both identical and different characters in respondents' answers. Based on the questioning it was found out, that the main reason for the development of small breweries is the deteriorated quality of beer from large corporate breweries. Due to the descending quality of beer production of large breweries, customers have begun to prefer small breweries that follow traditional methods of beer production. Moreover, the results of the investigation have shown that breweries in mountain locations need accommodation services for their operations much more than breweries in city centers. This study shown that the accommodation in the Giant Mountains’ small breweries is used mostly by guests traveling for winter and summer mountain activities. City-located breweries can be considered more as a part of restaurants according to a questioning evaluation which means that they usually do not provide accommodation.
