Abstract:

Abstrakt Číhalová, Anna. Logistika zásobování hotelů a restaurací. [Diplomová práce]. Vysoká škola hotelová v Praze 8, Praha: 2017. 90 s. Diplomová práce je zaměřena na nákupní logistiku a hodnocení dodavatelů, které ovlivňuje řadu dalších zásobovacích procesů. Předmětem teoretické části je vymezení pojmů souvisejících s nákupní logistikou a specifik stravovacích služeb. V praktické části jsou analyzováni dodavatelé, formulovány a porovnávány kritéria hodnocení dodavatelů s návrhem doporučení pro racionalizaci spolupráce s dodavateli, a tedy i zlepšení zásobovacího systému. V závěru je provedeno vyhodnocení porovnání dvou odlišných gastronomických provozů, jejímž výsledkem je, že služby dodavatelů jsou podobné u obou sledovaných gastronomických jednotek. Současně je závěrem konstatováno, že je potřeba neustále zpřesňovat požadavky na rozsah a pravidelnost dodávek prostřednictvím hodnocení služeb dodavatelů.

This master's thesis focuses on the logistics of purchasing and the evaluation of suppliers which influence many other supplying processes. The theoretical part defines terms related to purchasing logistics and the specifics of catering services. The practical part analyses suppliers and formulates and compares criteria for the evaluation of suppliers. It offers a suggestion for rationalization of the cooperation with suppliers which would lead to an improvement of the supplying system. The final part compares an evaluation of two different gastronomy establishments. The result presents a similar outcome for both observed units. The thesis concludes that there is a constant need for specifying requirements concerning the range and regularity of supplies via the service evaluation of suppliers.
