Teoretická část diplomové práce charakterizuje luštěniny s bližším zaměřením na čočku. Jsou zde uvedeny její nutriční parametry, chemické složení a její význam ve výživě člověka. V teoretické části je dále definována vláknina, její chemické složení, rozdělení podle roz-pustnosti ve vodě, vlastnosti, fyziologické účinky a metody stanovení. The theoretical part of the master thesis defines legumes with focus on lentil. Nutritive pa-rameters, chemical composition and its importance to human nutrition are described. Fibre, its chemical composition, sorting according to solubility in water, physiological effects on human and determination methods are also defined in the theoretical part.
