Comparison of meat performance parameters of slaughter bulls of the Aberdeen angus breed and their crosses

Abstract:

Cílem bakalářské práce bylo porovnat jatečné výtěžnosti mezi čistokrevnými býky plemene aberdeen angus a kříženými býky aberdeen angus a aubrac. Do výzkumu bylo zahrnuto 5 čistokrevných a 5 křížených býků. Sběr dat probíhal z bouracích listů z bio jatek Sasov Jihlava. Tento sběr obsahoval živou hmotnost býků, hmotnost jatečně upraveného těla a hmotnosti jednotlivých partií masa. Data byla vyhodnocena pomocí analýzy rozptylu. Průkazné rozdíly se vyskytovaly u živé hmotnosti, ořezů, kostí a loje. Výsledky naznačují, že i přesto, že čistokrevní býci vykazovali vyšší celkovou hmotnost, měli vyšší podíl ořezů, kostí a loje. Naopak kříženci, kteří vykazovali nižší celkovou hmotnost, měli nižší podíl ořezů, kostí a loje. Průměrná živá hmotnost čistokrevných býků byla 816 kg, býci křížení měli průměrnou živou hmotnost 748 kg. Co se týče ořezů, průměrná hmotnost u čistokrevných býků činila 43,79 kg, u křížených pak 37,46 kg. Z hlediska kostí byla u čistokrevných býků průměrná hmotnost 66,20 kg, u křížených 58,68 kg. Průměrná hmotnost loje u čistokrevných býků činila 38,12 kg, ale u křížených pouze 14,96 kg.

Abstract:

The aim of the bachelor thesis was to compare carcass yields between purebred aberdeen angus bulls and crossbred aberdeen angus and aubrac bulls. Five purebred and five crossbred bulls were included in the research. The data collection was carried out from the culling database of Sasov Jihlava Bio-slaughterhouse. This data included live weight of bulls, carcass weight and weights of individual meat parts. The analysis was carried out using the ANOVA test. Significant differences were in live weight, trim, bone and fat. The results indicate that even though purebred bulls had a higher total weight, they had a higher proportion of trimmings, bones and fat. Conversely, the crossbred bulls, which showed lower total weight, had a lower proportion of trimmings, bones and fat. The average live weight of pure bulls was 816 kg, while crossbred bulls had an average live weight of 748 kg. In terms of trimming, the average weight of the purebred bulls was 43,79 kg and that of the crossbred bulls was 37,46 kg. In terms of bones, the average weight of the purebred bulls was 66.20 kg and that of the crossbred bulls 58.68 kg. The average fat weight of purebred bulls was 38,12 kg, but only 14,96 kg for crossbred bulls.
