Food wastage - analysis of households and chain stores

Abstract:

Předkládaná diplomová práce se v obecné části věnuje plýtváním potravinami v České republice a ve světě. Dále jsou zde zmíněny různé historické souvislosti a poslední částí rešerše je popis příčin, důsledků a řešení tohoto neefektivního nakládání s potravinami. Stěžejní část práce se zabývá analýzou výsledků proběhlého dotazníkového šetření mezi českými domácnostmi a jeho následným vyhodnocením. Poslední částí diplomové práce je analýza uskutečněného výzkumu vybraných obchodních řetězců a jejich následné porovnání a vyhodnocení. V návaznosti na výsledky obou výzkumů jsou představena možná řešení a navržena opatření. Na základě dotazníkového šetření vyšlo najevo, že české domácnosti mnohdy s potravinami skutečně plýtvají a je zde také určitá souvislost mezi strukturou domácností, věkem respondentů a úrovní plýtvání. Co se týče části zabývající se analýzou obchodních řetězců, zde se ukázalo, že sledované prodejny mají velmi dobrý systém prevence vzniku potravinového odpadu, na druhou stranu je zde ale vícero problémů ohledně nové legislativy o darování neprodejných potravin, která je vzhledem k její krátké platnosti nedořešená.

Abstract:

This dissertation deals with the waste of food in the Czech Republic and the world. Further, there are mentioned various historical contexts and the last part of the research is a description of the causes, consequences and solutions of this inefficient use of food. The main part of the thesis deals with the analysis of the results of the questionnaire survey among Czech households and their subsequent evaluation. The last part of the diploma thesis is an analysis of realized research of selected chain stores and their subsequent comparison and evaluation. Following the results of both studies, possible solutions and measures are presented. Based on a questionnaire survey, Czech households often waste with food and there is also a certain link between household structure, respondents' age and waste levels. As far as the part dealing with the analysis of the chain of stores is concerned, it has been shown that the monitored shops have a very good system of prevention of food waste, on the other hand, there are several problems with the new legislation on the donation of unsalted foods, which due to its short validity is not solved.
