Abstract:

Tato práce se věnuje tématu finančních i nefinančních metod, které lze využít k efektivnímu zahájení a rozvoji udržitelného malého nebo středního podnikání ve vysoce konkurenčním prostředí pohostinství. V rámci primárního výzkumného cíle výzkum této práce zkoumá finanční i nefinanční strategie pěti vybraných majitelů malých až středních podniků v pohostinství, a to jak v době založení podniku, tak i později. Sekundárním cílem výzkumu je prozkoumat, jak majitelé úspěšně prošli finančními problémy způsobenými omezeními vynucenými během pandemie COVID-19. Pro dossažení výzkumných zjištění byl využit kvalitativní výzkumný design založený na polostrukturovaných rozhovorech a tematické analýze. Bylo zjištěno, že všichni respondenti výrazně upřednostňují samofinancování před alternativními způsoby, zejména před bankovními úvěry. Výsledky výzkumu naznačují, že klíčovou součástí úspěšného podniku v pohostinství je dynamická tvorba cen, která může v případě potřeby zvýšit poptávku. Důležité je také snížit náklady všude tam, kde to lze, avšak bez ohrožení spokojenosti zákazníků. Všechny podniky utrpěly ztrátu v důsledku pandemie. Některé z nich se snažily přizpůsobit uplatněním nové strategie, aby ztráty snížily, některé zůstaly mimo provoz.

This thesis is devoted to the topic of financing as well as non-financing methods that can be used to effectively start and develop a sustainable small- or middle-sized business in the highly competitive environment of the hospitality sector. As part of the primary objective, the research of this thesis investigates financing and non-financing strategies of the five selected owners of small to medium sized hospitality ventures, at the time of establishing the venture as well as later on. The secondary objective of the research is explore how the owner successfully navigated through the financial issues caused by the restrictions enforced during the COVID-19 pandemic. A qualitative research design based on semi-structured interviews and thematic analysis was utilized to report research findings. It has been identified that all of the respondents strongly prefer self-financing over alternative methods, especially bank loans. . The research results suggests that a key part of a successful venture in the hospitality sector is dynamic pricing that can increase demand if needed. It is also important to cut the costs wherever it can be done, however, without compromising customer satisfaction. All buisnesses sustained a loss because of the pandemic. Some of them tried to adapt by applying a new strategy to reduce the losses, some stayed out off business.
