Analysis of Products Offered by Confectioneries in Selected Regions in the Czech Republic

Abstract:

ZAGRAPANOVÁ, Lenka. Analysis of Products Offered by Confectioneries in Selected Regions in the Czech Republic. [Bachelor Thesis] Institute of Hospitality Management. Prague: 2021. Total number of pages: 75 Bachelor thesis deals with the analysis of products offered by confectioneries in selected regions of the Czech Republic and it is divided into three parts: theoretical, analytical and proposal part. In the theoretical part basic terms used in confectionery are described together with the introduction of confectionery field. It also describes the basic ingredients, which are essential in the production of confectionery products. One of the largest sections in the theoretical part of the bachelor thesis is the history of confectionery in the world and in the Czech Republic, the beginnings of confectionery and the development of production. It includes a comparison of confectionery and products in the Czech Republic with three selected countries – The United States of America, Italy and France. Another part of the thesis provides detailed description of selected types of modern desserts, including their production process. The last part describes selected cities of Czech Republic, from which confectioneries analysed in the analytic part of this thesis come. The analytical part deals in detail with the description of the selected confectioneries and their offers. It includes situational analyses of specific confectioneries. It contains twelve situational analyses of confectioneries from selected regions of the Czech Republic. Situational analyses also include a description of the situation during the Covid-19 pandemic. The aim of the bachelor´s thesis is to evaluate the following questions. What attracts the customers most at the confectionery, what they pay attention to and whether they are interested in new confectionery trends. In addition I aimed to find out whether the offer of selected confectioneries reflects the needs of their customers, whether attention is paid to the interior and exterior design of the premisses in which they serve their customers and whether the companies are sufficiently promoted. The proposal part evaluates the results from the analytical part, which is elaborated using questionnaires. One questionnaire is addressed to consumers and the other to business owners or operators. The main goal of this part is to formulate proposals for improvement, which should encourage the visit rate in selected companies and thus increase the revenue. The conclusion contains a general description of the thesis, methods used in the analytical part and the overall impression of the author.

Celkový počet strán: 75 Bakalárska práca sa zaoberá analýzou ponuky cukrární v mnou vybraných regiónoch Českej republiky a je rozdelená do troch častí: teoretická, analytická a návrhová časť. V teoretickej časti sú opísané základné pojmy používané v cukrárstve a predstavenie cukrárskeho odboru. Ďalej popisuje základné suroviny, ktoré sú zásadné pri výrobe cukrárskych výrobkov. Jednou z najväčších častí teoretickej časti bakalárskej práce je história cukrárstva vo svete a v Českej republike, počiatky cukrárstva a vývoj výroby. Zahŕňa porovnanie cukrárstva a výrobkov v Českej republike s troma vybranými štátmi- Spojené štáty americké, Taliansko a Francúzsko. Ďalšou časťou tejto práce je aj opísanie vybraných druhov moderných dezertov, ktoré sú podrobne opísané vrátane ich výrobného postupu. Poslednou časťou je priblíženie vybraných miest Českej republiky, z ktorých pochádzajú cukrárne rozoberané v analytickej časti práce. Analytická časť sa podrobne zaoberá opisom vybraných cukrární a ich ponukami. Zahŕňa situačné analýzy konkrétnych cukrární. Obsahuje dvanásť situačných analýz cukrární z vybraných regiónov Českej republiky. Súčasťou situačných analýz je aj opísanie situácie počas pandémie Covid-19. Cieľom bakalárskej práce bolo zhodnotiť otázky čo zákazníkov najviac zaujme na cukrárni, čomu venujú pozornosť a či sa zaujímajú o nové cukrárske trendy. Ďalším cieľom bolo zistiť, či ponuka vybraných cukrární je prispôsobená potrebám svojich zákazníkov, či je venovaná pozornosť úprave interiéru a exteriéru podnikov a či sú podniky dostatočne propagované. V návrhovej časti sú zhodnotené výsledky analytickej časti, ktorá je vypracovaná pomocou dotazníkov. Jeden dotazník je adresovaný spotrebiteľom a druhý majiteľom alebo prevádzkovateľom podnikov. Hlavnou časťou je stanovenie návrhu na zlepšenie, ktoré by malo vybraným podnikom podporiť návštevnosť a tým zvýšiť príjmy. Záver obsahuje celkový opis práce, použité analytické metódy a celkový dojem autora.
