Italian Coffee Shop Business Model Analysis

Abstract:

Tato bakalářská práce se zabývá problematikou business modelu spolu s jeho ilustrací pro konkrétní podnik – italskou kavárnu a pekárnu. Jejím cílem je představit business model pro kavárnu, která přinese na český trh něco nového a zároveň bude schopná prosadit se v daném odvětví. První část je věnovaná teorii, kde je definován business model, zachycen jeho historický vývoj a podrobněji jsou rozebrány nejčastěji používané nástroje pro jeho tvorbu. Protože se jedná o italský podnik, zaměřili jsme se zde také na kávovou kulturu v Itálii. V teoretické části je čerpáno z odborné literatury. Součástí práce je také průzkum trhu, který přispěl k sestavení vlastního business modelu. V tomto výzkumu většina respondentů vyjádřila pozitivní postoj k návštěvě kaváren a pekáren. Dotázaní si více než na nízké ceny či jiné faktory potrpí na přístup zaměstnanců a kvalitu surovin, zároveň jsou pro mnohé z nich lákavé také cenově zvýhodněné nabídky. V praktické části je business model pro zvolený podnikatelský záměr navržen a analyzován. Každý stavební prvek business modelu je zde podrobně popsán a na konci je nastíněna úvaha o budoucím směřováním podniku. Celý návrh je v souladu s legislativou pro podnikání v oblasti gastronomie na českém trhu. Výsledkem této práce je business model pro kavárnu, která má potenciál stát se úspěšnou, konkurenceschopnou a škálovatelnou pro budoucí rozvoj. Tato práce může sloužit jako podklad pro další zpracování daného podnikatelského záměru v podobě podnikatelského plánu a pro jeho případnou realizaci v budoucnu.

Abstract:

This bachelor thesis deals with a business model and its illustration on a particular example of an enterprise – Italian style coffee shop and bakery. Its main aim is to introduce the business model for the coffee shop which could bring on the Czech market something new and which will be able to outreach in the coffee industry. The first part is devoted to theory in which the business model is defined, is caught its development and the tools used the most often for its creation are described in detail. For the reason that the venture is in Italian style, we aimed also on coffee culture in Italy. The theoretical part is based on specialized literature. In the practical part, the business model is designed and analyzed for chosen entrepreneurial intention. A major part of the respondents expressed a positive approach to visit cafés and bakeries. Employee´s attitude and quality of ingredients are for answerers more important than low prices and other factors. However, for the big part of respondents, price deals are still attractive. Each business model building block is closely described and an idea of future development is outlined. The whole project design is in accordance with the legislation for running business in the field of gastronomy in the Czech market. The result of this thesis is the business model for the coffee shop which has the potential to become successful, competitive, and scalable for its future development. This thesis can serve as a base for the further processing of chosen business intention in the form of the business plan and its prospective realization in the future.
