Possibility of applying bio gastronomy in the Czech Republic in comparison with other countries (Austria, Germany)

Abstract:

V první části jsem se snažila ucelit pojmy týkající se ekologického zemědělství. Přiblížit také veškeré věci, které jsou spojeny s ekologickým zemědělství. Samozřejmě také poukázat na složité procesy při pěstování a certifikaci biopotravin. Popsat celý systém kontroly ekologických zemědělců a seznámit s organizacemi, které tyto kontroly provádějí. Po přiblížení těchto náležitostí bylo třeba popsat trhy s biopotravinami v České republice, Německu a Rakousku. Pochopit zákonitosti obchodu a částečně přiblížit spotřeby biopotravin v jednotlivých zemí. V analytické části jsem se zaměřila na pochopení nákupních zvyklostí občanů ve velkém a malém městě nacházejícím se na území České republiky. Pomocí dotazníkového šetření se podařilo zjistit, že populace v ČR má na biopotraviny pozitivní názor. Překvapující bylo zjištění že by lidé v České republice uvítali biopotraviny ve veřejném stravování. Toto zjištění jsem porovnala se situací která panuje ve veřejném stravování v Německu a Rakousku. V těchto zemích se po porovnání sekundárních dat ukazovalo toto využití biopotravin jako jedno z nejdůležitějších. Snaha občanů těchto zemí o zdravý životní styl je podporována kampaní a reklamou která je placena vládou. Například ve školním stravování je zastoupení biopotravin při výrobě jídel 40% (Rakousko, Německo). Za to v ČR je zastoupení biopotravin použitých při přípravě školních jídel pod 10%. I v ČR by časem mohlo docházet k zvyšování zastoupení biopotravin využitých ve veřejném stravování prozatím však není tato možnost politicky podporována. To znamená že chybějí peníze na propagaci a v případě školního či nemocničního stravování i na samotné biopotraviny. Pokud se zaměříme na bio restaurace a bio bary je jejich výskyt mnohem četnější v zahraničí, kde se tento trend gastronomie šíří mnohem delší dobu. Na území České republiky je tento typ restaurací rozšířen především ve velkých městech. V malých městech je pro bio restaurace menší prostor, spíše by bylo lepší mít v biokvalitě pouze část menu a tím zvýšit diverzitu nabídky.

Abstract:

In the first part I tried to summarize concepts related to organic farming. Zoom also all the things that are associated with organic farming. Of course I also highlight the complex processes in the cultivation and certification of organic food. Describe the system of control of organic farmers and meet with organizations that carry out these checks . When you approach these requirements were necessary to describe the markets for organic food in the Czech Republic, Germany and Austria. Understand patterns of trade and partly to bring organic food consumption in the country . In the analytical part, I focused on understanding the buying habits of people in a large and a small town situated on the territory of the Czech Republic. With the survey , they found that the population in the Czech Republic has a positive opinion on organic food . A surprising finding was that people in the Czech Republic welcomed organic food in public catering . The findings were compared with the situation prevailing in public catering in Germany and Austria. In these countries compared to the secondary data showed that the use of organic food as one of the most important . The efforts of citizens of these countries a healthy lifestyle is supported campaigns and advertising that is paid by the government. For example, in the school board 's representation in the production of organic foods 40 % (Austria , Germany). In the Czech Republic it is the representation of organic food used in the preparation of school meals is below 10 %. Even in the Czech Republic in time could lead to increasing representation of recovered organic food in catering for the time being , however, this option is not politically supported. This means that lack of money for promotion and in the case of a school or hospital board and the actual organic food. If we focus on bio bio restaurants and bars , their occurrence is more frequent in foreign countries where this trend gastronomy spreads much longer . In the Czech Republic this type of restaurant expanded , especially in large cities. In small towns for bio restaurant less space , rather it would be better to have only organic quality of the menu and thereby increase the diversity of the menu.
