Evaluation of baking properties of winter wheat varieties

Abstract:

Cílem této diplomové práce bylo zjistit rozdíly u jednotlivých odrůd pšenice ozimé. Zároveň byl zkoumán vliv odrůdy, ročníku a stanoviště na fyzikální i mechanické vlastnosti těsta a pečiva jako výsledného produktu celého procesu. Literární rešerše této diplomové práce zahrnuje základní vymezení pšenice ozimé jakožto jedné ze základních obilovin. Další kapitoly pak popisují složení a základní stavbu pšeničné obilky. V poslední kapitole diplomové práce jsou uvedeny základní jakostní atributy pšenice. V experimentální části práce bylo zkoušeno šest odrůd pšenice ozimé ze stanic ÚKZÚZ ve dvou odlišných pěstebních oblastech sklizených v různých ročnících. Tyto odrůdy byly vybrány z jednotlivých skupin pekařské kvality (E, A, B, C). Vzorky zrna byly zpracovány na mouku na laboratorním mlýnu a takto získaná mouka byla použita na stanovení analytických a reologických vlastností. Následně byly vlastnosti jednotlivých odrůd experimentálně zjišťovány pekařským pokusem. Takto získané výrobky byly hodnoceny konkrétními ukazateli jakosti. Byla stanovena zejména senzorická jakost jednotlivých odrůd. Nejlepší charakteristiky vykazovala jednoznačně odrůda Annie. Tato odrůda byla specifická velmi vysokým obsahem lepkových bílkovin (40 %). Jako vysoké byly rovněž klasifikovány hodnoty Zelenyho testu (33,8 ml) a obsah dusíkatých látek (14,3 %). Pečivo z této odrůdy mělo velmi vysoký objem (820 ml) a velmi dobré senzorické i fyzikální vlastnosti. Jako nevhodná pro pekařskou výrobu byla naopak hodnocena odrůda Frisky, která měla nejnižší dosažené hodnoty u většiny analytických stanovení. Tato odrůda měla nízký obsah lepku (32 %), nízkou hodnotu Zelenyho testu (27,6 ml) a podlimitní obsah dusíkatých látek (11,2 %). V reologickém hodnocení dosáhla tato odrůda rovněž nejnižších hodnot jednotlivých ukazatelů. Byla zjištěna velmi nízká vaznost vody (53 %), krátká doba vývinu těsta (2 ¼ minuty), nízká stabilita těsta (4 ½ minuty) a vysoká hodnota poklesu konzistence (60 F.j.). V pekařském pokusu mělo pečivo vyrobené z této odrůdy poměrně nízký objem (640 ml) a nevýraznou až mdlou chuť. Ostatní hodnocené odrůdy byly vyhodnoceny jako použitelné pro výrobu pečiva. Byla potvrzena prvotní hypotéza, že obsah i vlastnosti bílkovin a škrobu jsou u pšenice založeny geneticky a jsou formovány vnějšími podmínkami. To se projevilo také rozdílnými reologickými vlastnostmi těsta a odlišnými charakteristikami pečiva. Největší vliv na dosaženou jakost pšenice měla odrůda, zásadní však byly pro většinu ukazatelů jakosti také vnější podmínky (daný sklizňový ročník a pěstební lokalita).

Abstract:

The aim of this thesis was to find out the differences between the different varieties of winter wheat. At the same time, the influence of variety, year and growing location on the physical and mechanical properties of dough and pastry as the final product was investigated. The literature search of this thesis includes a basic definition of winter wheat as one of the staple cereals. The following chapters then describe the composition and basic structure of the wheat grain. In the last chapter of the thesis, the basic quality attributes of wheat are presented. In the experimental part of the thesis, six varieties of winter wheat from the stations of the Central Institute for Supervising and Testing in Agriculture stationsin two different growing areas harvested in different years were tested. These varieties were selected from different baking quality groups (E, A, B, C). The grain samples were processed into flour in a laboratory mill and the flour thus obtained was used to determine analytical and rheological properties. Subsequently, the properties of the different varieties were experimentally determined by baking. The products thus obtained were evaluated by specific quality indicators. In particular, the sensory quality of the individual varieties was determined. The Annie variety clearly showed the best characteristics. This variety was characterised by a very high gluten protein content (40 %). The values of the Zeleny test (33,8 ml) and the nitrogen content (14,3 %) were also classified as high. This variety had a very high volume (820 ml) and very good sensory and physical characteristics. On the other hand, the variety Frisky was considered unsuitable for baking and had the lowest values obtained in most of the analytical determinations. This variety had a low gluten content (32 %), a low Zeleny test value (27,6 ml) and an underestimated nitrogen content (11,2 %). In the rheological evaluation, this variety also had the lowest values for each parameter. Very low water binding (53 %), short dough development time (2 ¼ minutes), low dough stability (4 ½ minutes) and high consistency drop (60 F.j.) were observed. In the baking trial, the pastry produced from this variety had a relatively low volume (640 ml) and a bland to insipid taste. The other varieties evaluated were judged to be suitable for pastry production. The initial hypothesis that the protein and starch content and properties of wheat are genetically based and shaped by external conditions was confirmed. This was also reflected in different rheological properties of the dough and different characteristics of the baked product. Variety had the greatest influence on the quality of wheat obtained, but external conditions (harvest year and growing location) were also essential for most of the quality indicators.
