Analysis of Glutenfree and Lactosefree Products Products Offered by Confectioneries

Abstract:

Bakalářská práce je zaměřena na analýzu nabídky bezlepkových a bezlaktózových cukrářských výrobků v cukrárnách hlavního města Prahy. Pro analýzu byly zvoleny následující podniky: Klárka kavárna-cukrárna, Cukrárna Buchta, Kavárna-cukrárna Elvíra, Zelenkova cukrárna a Libeřské lahůdky. Bakalářská práce se skládá z části teoretické, analytické a návrhové. V teoretické části jsou použité informace z relevantních zdrojů: odborné literatury, vědeckých časopisů a ověřených elektronických zdrojů. Teoretická část definuje důležité pojmy, které jsou použity v bakalářské práci. Jednotlivé kapitoly této části se věnují vhodným způsobům označování, skladování a výrobě cukrářských výrobků a krátké historii cukrářství. Další kapitoly se zaměřují na alergeny a legislativu, na lepek a laktózu a potraviny, ve kterých jsou přítomny a na zdravotní potíže spojené s lepkem a laktózou, konec této kapitoly je věnován bezlepkovým potravinám. Pod analytickou část spadá předvýzkum, který popisuje průběh výzkumu a cukrárny, které se ho zúčastnily. V jednotlivých subkapitolách jsou popsány cukrářské výrobky spolu s tabulkami s výpočty obchodní marže a nákladů na jejich výrobu, a to v běžné variantě a variantě bez lepku a laktózy. Poslední část je věnována výsledkům analytické části. Návrhová část vychází ze zjištěných poznatků v předchozích kapitolách práce a je zaměřena na způsoby rozšíření nabídky v cukrárnách, na poskytování informací o alergenech a jejich označení. Také je věnována způsobům zvýšení viditelnosti výrobků vhodných pro zákazníky s potravinovými alergiemi.

Abstract:

The bachelor's thesis is focused on the analysis of the offer of gluten-free and lactose-free confectionary products in confectioneries located in Prague. The following companies were chosen for the analysis: Klárka Kavárna-cukrárna, Cukrárna Buchta, Elvíra Kavárna-cukrárna, Zelenkova cukrárna and Libeřské lahůdky. The bachelor thesis is divided of three parts theoretical, analytical and proposal of improve. In theoretical part are used information from relevant sources: professional literature, scientific journals and verified electronic sources. The theoretical part deals with the important terms which are used in work. The chapters of this part are about necessary methods of marking, storage and production of pastry and a short history of confectionery. Next chapters are focus on allergens and legislation, on gluten and lactose and the foods in which they are present and on health problems associated with gluten and lactose. The end of this chapter is about gluten-free foods. The analytical part includes pre-research, which describes the course of the research and the confectioneries that are included in it. Confectionery products are described in the next chapters using a spreadsheets with calculations of gross profit margin and production costs in regular pastry and in gluten-free and lactose-free pastry. The last part is about the results of the analytical part. The proposal part is based on the knowledge found in the previous chapters of the bachelor's thesis and is focused on ways to expand the offer in confectioneries, on providing information about allergens and their labeling. It is also about ways to attract customer attention with food allergies.
