Types of wine bottle caps used in the Czech Republic

Abstract:

Hlavním tématem této práce je srovnání jednotlivých typů zátek, jejich optimální volba vzhledem ke kvalitě lahvovaného vína a jeho potenciálu zrání. Součástí práce je také aktuální stav využívání různých druhů uzávěrů z pohledu 21 moravských vinařství různé velikosti, které jsem oslovila pomocí webového dotazníku.V teoretické části jsou charakterizovány jednotlivé typy uzávěrů - korkových, syntetických, šroubovacích, korunkových, skleněných Vino lock a Zork. Zátky jsou porovnávány především z hlediska materiálového, cenového a životnosti. V práci jsou zdůrazněny rovněž výhody a nevýhody používání těchto zátek. V praktické části je popsáno chování vinařů směrem k volbě vinných uzávěrů. Volba uzávěrů je zde charakterizována i z pohledu malého, středního a velkého vinařství. Průzkum prokázal, že nejpoužívanějším typem zátky je přírodní korek. Jeho nevýhodou je vyšší cena a také možný vznik korkové pachuti (TCA). Syntetické a šroubovací zátky si stojí v oblibě na trhu přibližně srovnatelně. Mají vyšší energetickou zátěž výroby, tedy zatěžují významněji životní prostředí, ale mají nižší cenu. Další typy zátek jsou používány spíše okrajově.

Abstract:

The main topic of this dissertation is the comparison of individual types of stoppers, their optimal choice regarding quality of bottled wine and its ripening potential. The dissertation also includes the current state of use of different types of stoppers from the point of view of twenty-one wineries of different sizes that I contacted by means of an online questionnaire. For this purpose, the following types of stoppers: synthetic, screw, crown, Vino lock and Zork glass stoppers were characterized into detail.Various types of stoppers are characterized in the theoretical part of the dissertation. The stoppers are compared mainly from material, price and life-time period point of views. The advantages and disadvantages of individual stoppers are also emphasized in the theoretical part. The practical part describes winemakers´ behaviour regarding the choice of stoppers. The choice of stoppers is presented from the point of view of small, medium-sized and large wineries. The results show that natural cork is the most frequently used stopper. Its big disadvantages are high price and a possibility of cork aftertaste occurrence (TCA). The popularity of other types of synthetic and screw stoppers is very similar. Their main advantage is their lower price. Their disadvantages are mainly connected with the fact that their production requires higher level of energy consumption thus they become burdens for environment. Other types of stoppers are used rather exceptionally.
