Selection of Saccharomyces cerevisiae strain for production of beta-glucan in industry
Abstract:
Beta-glucan is a polysacharide present in the cell wall of the yeasts. Cell wall represents 30 % of dry cell mass, while glucans, which are polymers of glucosis account for 60 % of cell wall mass. Glucans are presented in cell wall of Saccharomyces cerevisiae in two forms, as beta-1,3-glucan and beta-1,6-glucan. Beta-glukán je polysacharid zastúpený v bunkovej stene kvasiniek. Bunková stena pritom predstavuje 30 % zo suchej váhy bunky a glukány ako polyméry glukózy tvoria 60 % z váhy bunkovej steny. Glukány sú v bunkovej stene kvasinky Saccharomyces cerevisiae zastúpené dvoma typmi beta-1,3-glukánom a beta-1,6-glukánom.
