Business plan of a new gastronomic facility

Abstract:

Due to the unstable and unfavourable overall global situation and the uncertainty in the perspectives of its further development, which are caused by tense international relations and the preceding pandemic crisis, the profitability of business is a frequently discussed topic these days. The aforementioned COVID-19 pandemic has fundamentally changed consumer behaviour in many ways, and some distribution channels that were considered expensive and redundant in the past, have slowly become an inseparable part of business marketing. The subject of this thesis is the compilation and analysis of a feasible business plan. The theoretical-methodological part of the work defines related terms, defines terms according to the valid legislation of the country of operation and compiles an overview of the legal requirements for operating a gastronomic establishment in the country of operation. This forms the basis for the analytical part of the work, which is carried out by situational analysis, PEST analysis and SWOT analysis. Thus, the work analyses the micro-environment and the macro-environment of the company. A questionnaire survey is also a part of the situational analysis. In the conclusion part, a full business plan for a mobile catering operation in the city of Košice is drawn up, it includes the introduction of the company, its operational plan, marketing plan and financial plan. The financial plan describes the years 2023 to 2028 and contains three scenario variants that are supposed to simulate different developments in the overall business environment. Each of the variants is divided into two further sub-variants, one of which used the distribution channels of delivery platforms and the other did not. The financial plan is completed by displaying the break-even point of individual variants and sub-variants over time. In the last part of the work, the author proposes recommendations based on the established facts.

Z dôvodu nestabilnej a nepriaznivej celkovej svetovej situácie a neistoty v ohľadoch jej ďalšieho vývoja, ktoré sú spôsobené napätými medzinárodnými vzťahmi a nim predchádzajúcou pandemickou krízou je v dnešnej dobe rentabilita podnikania často skloňovanou témou. Spomínaná pandémia COVID-19 od základov zmenila spotrebiteľské chovanie v mnohých smeroch a niektoré distribučné cesty, ktoré sa v minulosti pokladali za drahé a nadbytočné, sa stali pomaly neoddeliteľnou súčasťou marketingu podnikov. Predmetom tejto diplomovej práce je zostavenie a analýza realizovateľného podnikateľského zámeru. Teoreticko-metodologická časť práce definuje súvisiace pojmy, vymedzuje pojmy podľa platnej legislatívy krajiny pôsobenia a zostavuje prehľad zákonných požiadaviek na prevádzkovanie gastronomického zariadenia v krajine pôsobenia. Tým tvorí základ pre analytickú časť práce, ktorá sa zaoberá situačnou analýzou, PEST analýzou a SWOT analýzou. Tak práca analyzuje mikroprostredie a makroprostredie podniku. Súčasťou situačnej analýzy je aj dotazníkový prieskum. V návrhovej časti je zostavený plný podnikateľský zámer pre pojazdnú gastronomickú prevádzku v meste Košice, obsahujúci predstavenie podniku, jeho operačný plán, marketingový plán a plán finančný. Finančný plán popisuje roky 2023 až 2028 a obsahuje tri scenárové varianty, ktoré majú simulovať rôzny vývoj celkového podnikateľského prostredia. Každy z variantov je rozdelený na ďalšie dva podvarianty, z ktorých jeden využíva distribučné cesty donáškových platforiem a druhý nie. Finančný plán je zavŕšený zobrazením bodu zvratu jednotlivých variantov a podvariantov v čase. V poslednej časti práce autor navrhuje odporúčania na základe zistených skutočností.
