Dairy products enriched with non-traditional plant and animal commodities

Abstract:

Předložená diplomová práce je zaměřena na obohacení fermentovaných mléčných výrobků o netradiční komodity rostlinného i živočišného původu. Záměrem teoretické části práce je shrnout základní poznatky o těchto výrobcích a komoditách a podrobněji naznačit benefity jejich konzumace. V rámci praktické části práce je uskutečněna pilotní studie monitoringu fermentace jogurtů obohacených o moučku z potemníka moučného (Tenebrio molitor) a sušených plodů kustovnice čínské (Lycium chinense) pomocí termodynamických senzorů. Přídavek kustovnice fermentaci ovlivnil kladně, při přídavku jedlého hmyzu se však pozitivní vliv nepodařilo prokázat. Praktická část práce je doplněna o stanovení vlákniny u různých kultivarů jeřábu ptačího (Sorbus aucuparia), rakytníku řešetlákového (Hippophae rhamnoides) a stanovení chitinu v larvách a svlecích potemníka moučného. Díky nezanedbatelnému obsahu těchto substancí jsou tyto komodity vhodnými kandidáty pro fortifikaci fermentovaných mléčných výrobků.

Abstract:

Presented diploma thesis is focused on enrichment of fermented dairy products with non-traditional animal and plant commodities. The aim of the theoretical part is to summarize basic knowledge about these products and commodities, in particular the benefits of their consumption. In the experimental part of the thesis there is a pilot study of monitoring the fermentation of yogurt conducted using thermodynamic sensors. Yogurts were enriched with flour from mealworms (Tenebrio molitor) and dried goji berry (Lycium chinense). The addition of goji berry had a positive effect on fermentation, but the addition of edible insects failed to show a positive effect. The experimental part of the work also consists of the determination of neutral detergent fiber in various cultivars of rowanberry (Sorbus aucuparia), sea buckthorn (Hippophae rhamnoides) and the determination of chitin in mealworm larvae and exuviae. Due to significant content of these substances, mentioned commodities are suitable candidates for the fortification of fermented dairy products.
