Use of cereals and legumes in food production for vegetarians

Abstract:

Teoretická část práce je zaměřena na historii vegetariánství. Jsou zde popsána různá od-větví vegetariánského stravování, která se po celou dobu společně s vegetariánstvím formo-vala. Pozornost je věnována problematice alimentárních infekcí a případným druhům intole-rancí na potraviny a jejich složky. V další části je věnována pozornost vybraným druhům obilovin a luštěnin, popsáno je jejich chemické složení a možnosti jejich uplatnění ve vegetariánském stravování. Praktická část je věnována možnosti uplatnění vitálního lepku při výrobě tzv. seitan burgeru. Je provedeno senzorické hodnocení výrobku. Závěr práce je věnován dotaz-níkovému šetření zaměřenému na skupinu vegetariánsky orientovaných respondentů, kterým bylo položeno devět otázek ohledně jejich stravování.

Abstract:

The theoretical part of the bachelor thesis is focused on the history of vegetarianism. Vari-ous branches of vegetarian nutrition are described here, which have been forming alongside vegetarianism. Attention is paid to the issue of foodborne infections and possible types of intolerances to food and its components. Further, attention is paid to selected types of cere-als and legumes, their chemical composition and the possibilities of their application in ve-getarian food are described. The practical part is devoted to the possibility of using vital gluten in the production of the seitan burger. Sensorial evaluation of the product is perfor-med. The conclusion of the thesis is devoted to a questionnaire survey focused on a group of vegetarian-oriented respondents, who were asked nine questions about their diet.
