Utilization of waste raw materials in the production of plant-based foods

Abstract:

Tato bakalářská práce se zabývá problematikou tvorby sekundárních produktů, pocházejících z neživočišné výroby. Teoretická část je zaměřena na charakteristiku tohoto zdánlivého odpadu a způsob jeho přeměny za účelem zvýšení rentability pořízovaných prostředků na vstupu. V úvahu je samozřejmě brán i dopad na ekologii a obnovitelnost. V práci se například dočteme, jakými mechanizmy docílíme zužitkování rostlinných zbytků z produkce nápojů a potravin, např. čajů, vín, cukru, aj. V rámci experimentu se zkoumalo nahrazení drahé složky výroby pesta – ořechů/semínek, za jinou, levnější. Tovary se hodnotily senzorickou zkouškou, která se zjistila přijatelnost/nepřijatelnost spotřebiteli.

Abstract:

This bachelor thesis deals with the issue of creating secondary products originating from non-animal production. The theoretical part is focused on the characteristics of this apparent waste and the method of its transformation in order to increase the profitability of the acquired funds at the input. The impact of course on ecology and renewables are also taken into account. In this work, we will read, by what mechanisms we will achieve the utilization of plant residues from the production of beverages and food, such as tea, wine, sugar, etc. The experiment examined the replacement of the expensive component of pesto production – nuts/seeds, with a different cheaper one. The goods were evaluated by a sensory test, which was found to be acceptable / unacceptable to the consumer.
