Abstract:
Cílem této diplomové práce bylo stanovit obsah biogenních aminů v pivech vyrobených různou technologií. Byla použita piva se stupňovitostí 12o a 14o. Obsah biogenních aminů byl stanoven pomocí Automatického analyzátoru aminokyselin AAA400. Ve zkoumaných vzorcích byly detekovány biogenní aminy histamin, tyramin, putrescin, kadaverin a spermidin. Abstract:
The aim of this diploma work was to investigate the content of biogenic amines in beers produced by different technology. There were analysed 12o and 14o beers. The content of biogenic amines was determined by using Automatic analyzer of aminoacids AAA400. Histamine, thyramine, putrescine, cadaverine and spermidine were detected in all samples.
