Abstract:

ČERNÝ, Aleš. „ Business plan of multifunctional catering establishments. [Bachelor dissertation] Institute of Hospitality Management. Prague 2017. Number of pages : 70 The bachelor dissertation "Multifunctional gastronomic business plan" is designed to serve as a real business plan for setting up a business and it´s next managing in the future. In the first, theoretical part are briefly defined concepts related to the business in the fields of hospitality, the specification of the sales centers and the content of the business plan. The analytical part is devoted to the compilation of the business plan itself, which takes into account all relevant aspects of the business. In the introduction is the sketched essence of business, the value of the business, its aims and goals and the very product. For the needs of the start-up business, a market analysis was created. At the micro level, taking into account customers, suppliers and competitors. The competition analysis was developed on the basis of the ETI's competitiveness model. Macro level is defined on PESTLE analysis, dealing differently on each individual external factor affecting the business. Subsequently, there is a more detailed description of company marketing and a SWOT analysis of internal and external factors influencing business. At the end, a financial plan is drawn up. It estimates the initial investment required to set up the business, the calculated operating costs, the initial balance sheet and the profit and loss account. For business purposes, a turning point was also calculated, setting minimum incomes for which revenues are equal to costs. By determining the returnment of invested capital, we will get a comprehensive business plan that will serve as a founding venture for the Citadel's social and entertainment business. If necessary, it can serve to obtain a foreign source of property coverage,while addressing investors or banks.

ČERNÝ, Aleš. Podnikateľský plán multi-funkčnej gastronomickej prevádzky. [Bakalárska práca] Vysoká škola hotelová. Praha: 2017. Počet strán: 70 Bakalárska práca na tému „Podnikateľský plán multi-funkčnej gastronomickej prevádzky“ je vypracovaná tak aby mohla slúžiť ako reálny podnikateľský plán pre založenie danej prevádzky a pri spravovaní jej ďalšieho chodu. V prvej, teoretickej časti sú stručne definované pojmy súvisiace s podnikaním v danom obore, špecifikácia odbytových stredísk a popísaný obsah podnikateľského plánu. Analytická časť je venovaná zostaveniu samotného podnikateľského plánu, v ktorom sú zohľadnené všetky relevantné aspekty podnikania. V úvode je načrtnutá podstata podnikania, hodnoty podniku jeho zameranie a produkt. Pre potreby začínajúceho podniku na bola vytvorená analýza trhu. Na úrovni mikro prostredia zohľadňujúca zákazníkov, dodávateľov a konkurenciu. Analýza konkurencie bola vypracovaná na základe modelu konkurencieschopnosti ETI. Makro prostredie podniku popísané na základe PESTLE analýzy, ktorá podrobne rozoberá jednotlivé externé faktory ovplyvňujúce podnikanie. Následne je bližšie popísaný marketing podniku a vypracovaná SWOT analýza interných a externých faktorov ovplyvňujúcich podnikanie. V závere je zostavený finančný plán. V ňom je odhadnutá počiatočná investícia nutná na založenie podnikania, vypočítané náklady na chod prevádzky, zostavená počiatočná rozvaha a výkaz ziskov a strát. Pre potreby podnikania bol taktiež vypočítaný bod zvratu, stanovujúci minimálne tržby pri ktorých sa výnosy rovnajú nákladom. Stanovením rentability vloženého kapitálu overíme realizovateľnosť celého projektu získame ucelený podnikateľský plán, ktorý poslúži pri zakladaní spoločensko-zábavného podniku Citadela. V prípade potreby môže tento slúžiť pre získanie cudzieho zdroju krytia majetku, pri oslovovaní investorov alebo bánk .
