Abstract:
Pigmenty jsou součástí veškeré živé hmoty a zajišťují atraktivní zbarvení mnoha přírodních materiálů. Lidé, stejně jako většina zvířat, vnímají okolní svět primárně prostřednictvím zraku, resp. barev, a proto bývá často už na základě barevného vjemu vyhodnocována chuť, bezpečnost a nezávadnost i výživová hodnota potraviny.
