Gluten-free diet and its impact on human health

Abstract:

Cílem práce je sumarizovat fakta o vlivu lepkové stravy na lidské zdraví, zjistit úroveň znalostí veřejnosti o problematice lepku a vyhodnotit nabídku bezlepkových potravin na trhu. Práce sumarizuje lékařsky podložená, avšak většinovou společností stále nepřijatá, fakta o negativním vlivu lepku na lidské zdraví a shrnuje výčet onemocnění, jejichž průběh konzumace lepku negativně ovlivňuje. V práci se dále věnuji vlastnímu výzkumu, jehož cílem bylo zjistit úroveň znalostí veřejnosti o problematice lepku a zhodnotit nabídku bezlepkových potravin ve vybraných obchodních řetězcích. Součástí práce je i shrnutí výstupů z obou výzkumů a předložení výčtu řešení.

Abstract:

This work aims to summarize the facts about the influence of gluten on human health, to determine the level of public awareness of the issue and to evaluate the market offer of gluten-free food. The thesis summarizes medically based, but by general public still unaccepted facts about the negative impact of gluten on human health and summarizes the list of diseases whose course ingestion of gluten negatively affects. It is also dedicated to the research and its aim was to determine the level of public awareness of the issue of gluten and to evaluate gluten-free foods offer in selected retail chains. The thesis also summarises the outcomes of both parts and present a list of solutions.
