Fungi genus Penicillium used during production of cheeses

Abstract:

Tato bakalářská práce je zaměřena na plísně rodu Penicillium používané při výrobě sýrů. První část zachycuje stavbu eukaryotních buněk a morfologii plísní. Druhá část je zaměřena na charakteristiku plísní rodu Penicillium. Třetí část se zabívá rody plísní Penicillium používanými při výrobě sýrů. Ve čtvrté části je popsána historie plísnových sýrů v ČR a ve světě. 5 a 6 část je zaměřena na výrobu plísnových sýrů v ČR a na původní výrobu těchto sýrů. V 7 části je uveden přehled plísńových sýrů vyráběných v zahraničí. Závěr je konstatováním faktu, že rod Penicillium je velmi rozšířená plíseń, jednotlivé druhy však převážně v potravinářském průmyslu škodí, ale i tak se povedlo získat několik druhů, které člověk dokázal využít k přípravě potravin. Plísnové sýry se těší velké oblibě nejenom u nás ale i ve světě i když současní lidé jsou s výběrem potravin poněkud opatrnější.

Abstract:

This bachelor thesis targets the moulds of the genus Penicillium used in the cheese production. The first part describes the cell construction of Eukaryotes and the morphology of moulds. The second part represents the characteristics of the moulds of the genus Penicillium. The third part is dedicated to the genera of the moulds of Penicillium used in the cheese production. The fourth part describes the history of the veined blue cheeses in the Czech Republic and in the foreign countries. The fifth and the sixth parts describe the cheese production in the Czech Republic and the original production of this kind of cheeses. The seventh part presents the list of the moulded cheeses produced abroad. The conclusion of this thesis states the fact the genus Penicillium is a wide {--} spread mould. The particular species cause harm in the food {--} processing industry. In spite of this fact there are species of moulds the man could use in the food preparation. The mould cheeses are very popular not only in our country but all over the world. However the contemporary people are cautious about the food selection.
