Food packaging in a protective atmosphere

Abstract:

Tato bakalářská práce se zabývá problematikou balení potravin v ochranné atmosféře a migrací složek z obalu do potraviny. Práce shromažďuje informace o nejvyužívanějších obalových materiálech, jejich aplikacích v praxi, či o legislativních požadavcích, které jsou jejich nedílnou součástí. Obecně lze o obalech říci, že by měly výrobek chránit před vnějšími vlivy. Informace na obalu výrobku musí být uvedeny jednoznačně a v souladu s platnou legislativou, zároveň nesmí jejich interpretace uvádět spotřebitele v omyl. Práce se dále zabývá ochrannou atmosférou. Za ochrannou atmosféru se považuje směs plynů dusíku, kyslíku a oxidu uhličitého, které nahrazují vzduch v obalu. Vakuové balení a řízená atmosféra patří k dalším využívaným metodám při balení výrobku do ochranného obalu. Část práce je věnována migraci složek z obalu do potraviny a problematice výskytu ftalátů v obalových materiálech.

Abstract:

This bachelor thesis is focused on packaging food in a protective atmosphere and the migration of components from the packaging into food. This thesis gathers information about the most used packaging materials, their applications in practise, or the legislative requirement that are their integral part. In general, packaging is used to protect the product from external influences. The information on the packaging of the product must be unambiguously, clear and in accordance with the actual legislation. The next part in this thesis is about the protective atmosphere. Oxygen, nitrogen and carbon dioxide are gases which are used in modified atmosphere. Air in packaging is replaced with the gases. Vacuum packaging and controlled atmosphere are the next methods for product protective. The next part is about migration components from the packaging into food. The last one is issue of the occurence of phthalates in the packaging materials.
