Analysis of fruit spirits

Abstract:

Diplomová práce je věnována analýze ovocných destilátů. Teoretická část práce je zaměřena na výrobu a sloţení alkoholických nápojů vyráběných ve světě, zejména na problematiku ovocných destilátů. Popisuje jednotlivé fáze výroby ovocných destilátů, včetně výběru surovin, procesu a podmínek fermentace ovocného kvasu a destilace. Dále se zaměřuje na chemické sloţení ovocných destilátů, izolaci těkavých látek z ovocného destilátu a následnou chromatografickou a senzorickou analýzu. V poslední části teoretické části popisuje principy statistické analýzy dat, konkrétně ortogonální projekce do latentních struktur a hierarchické analýzy shluků. Experimentální část diplomové práce je věnována analýze jednodruhových ovocných destilátů a speciálních netradičních destilátů pomocí plynové chromatografie s plamenově-ionizační a hmotnostní detekcí. Získané aromaprofily byly pouţity jako tzv. ?fingerprinty? pro rozdělení testovaných destilátů podle druhu ovoce. Rozlišení destilátů z jablek, hrušek, švestek, mirabelek a meruněk bylo provedeno pomocí metod ortogonální projekce do latentních struktur a hierarchické analýzy shluků. Druhá část experimentální části práce se zabývala analýzou těkavých látek v netradičních druzích destilátů s cílem získat co nejvíce informací o sloţení jejich aromaprofilů. Získané výsledky byly porovnány vzájemně a také s dostupnou literaturou.

Abstract:

The aim of this thesis is analysis of home-made fruit spirits. The theoretical part is focused on alcoholic beverages, especially fruit spirits, their production around the world and chemical composition. Production stages of fruit spirits are defined, including raw material selection, fermentation as wel as distillation conditions. Furthermore, this is part dedicated to chemical composition of fruit spirits, isolation of volatile compounds from spirits and their chromatographic and senzoric analysis. The last section of the theretical part deal with statistical analysis and describes principles of orthogonal projections to latent structures and hierarchical clusters analysis. Experimental part is focused on analysis of single-species fruit spirits and special non-traditional kinds of spirit using gas chromatography with flame-ionization and mass spectrometry detection. Gained fruit spirits aromaprofiles were used as ?fingerprints? distinguishing tested spirits by original fruit source. Spirits from apples, pears, plums, mirabelles and apricots were differentiated by the method of orthogonal projections to latent structures and hierarchical clusters analysis. Second section of experimental part aimed on volatile compounds analysis in non-traditional kinds of spirits in order to gain as much information as possible about volatile compounds in aromaprofiles. Acquired results were compared to each other along with available literature.
