Preservation of Czech Traditions in Gastronomy in Horácko and Podhorácko Region

Abstract:

Zvýšení konkurenční výhody restaurací, které zařazují do jídelních lístků staročeské zvyky a pokrmy, využívání sezónních a regionálních potravin a odhalení současných trendů s ohledem na český kalendář je obsahem bakalářské práce. Jejím hlavním cílem bylo zhodnocení podvědomí obyvatelů regionu Horácka a Podhorácka k vybraným tradičním obyčejům a jídlům. Snahou bylo zjistit, jestli obyvatelé Horácka a Podhorácka znají tradiční pokrmy oblasti, kde žijí, zdali je připravují a jestli dodržují typické české zvyky. Vedlejším cílem práce bylo zjistit, zda jsou tradiční pokrmy součástí jídelních lístků restauračních zařízení regionu Horácko a Podhorácko a také poskytnout přehled o zachování českých zvyků. Byla utvořena teoretická část, kde byly definovány tradice, jejich vývoj, dále byl vylíčen vývoj české gastronomie. Byl zde charakterizován region Horácko a Podhorácko i s jeho zemědělským bohatstvím. Pomocí odborných publikací, internetových zdrojů a historických dokumentů byly vytvořeny souvislosti spojené s další, a to analytickou částí práce. V analytické části práce byl praktikován kvantitativní výzkum v podobě dotazníkového šetření, komparace, deskripce a vlastního pozorování, který byl směřován na obyvatele a restaurace vybraného regionu Horácko a Podhorácko. Průzkum jídelních lístků vytvořil přehled o podpoře tradičních zvyků zkoumaného regionu v restauračních zařízeních a existenci tradičních pokrmů. Výsledkem bylo zjištění, jak velké podvědomí obyvatelé mají o svých tradicích, jestli se pokrmy objevují na jídelních lístcích restaurací, jak se vyvíjely ceny svatomartinských pokrmů v posledních letech a jakým způsobem podpořit vztah obyvatelů k tradicím. A nakonec bylo navrhnuto, jak by mohla restaurační zařízení nabízet tradiční pokrmy a zvýšit svou konkurenceschopnost.

Abstract:

Increasing the competitive advantage of restaurants that include old Czech customs and dishes in their menus, use seasonal and regional foods, and uncovering current trends with regard to the Czech calendar is the content of the bachelor's thesis. Its main goal was to evaluate the subconscious of the inhabitants of the Horácka and Podhorácka region about selected traditional customs and foods. The aim was to find out whether the inhabitants of Horáck and Podhoráck know the traditional dishes of the area where they live, whether they prepare them and whether they observe typical Czech customs. A secondary goal of the work was to find out whether traditional dishes are part of the menus of restaurants in the Horácko and Podhorácko region and also to provide an overview of the preservation of Czech customs. A theoretical part was created where traditions and their development were defined, and the development of Czech gastronomy was also described. The Horácko and Podhorácko region and its agricultural wealth were characterized here. With the help of professional publications, Internet resources and historical documents, connections were created connected to the next, namely the analytical part of the work. In the analytical part of the work, quantitative research was practiced in the form of a questionnaire survey, comparison, description and personal observation, which was directed at the residents and restaurants of the selected region of Horácko and Podhorácko. The survey of menus created an overview of the support of traditional customs of the researched region in restaurant establishments and the existence of traditional dishes. The result was to find out how much awareness residents have about their traditions, whether the dishes appear on restaurant menus, how the prices of St. Martin's dishes have developed in recent years, and how to support the residents' relationship to traditions. And finally, it was proposed how restaurant establishments could offer traditional dishes and increase their competitiveness.
