Abstract:

Téma mé bakalářské práce jsem si vybrala z osobních důvodů obohacení znalostí a zmapování dosavadního vývoje provozu, který mám sama na starost. Hlavním cílem mé bakalářské práce je poskytnutí informací možného využití základních statistických metod ve službách, ukázané na příkladu gastronomické provozovny, v Restauraci u Chalupy ve Žďáře nad Sázavou, ve které pracuji. Dále jsem se snažila statisticky zhodnotit vývoj dosavadního fungování v minulých 7-mi letech, díky použití základních statistických metod a dát doporučení pro udržení, v lepším případě zlepšení, návštěvnosti v dané restauraci do budoucna. Teoretická část je čerpána ze zdrojů, z velké části odborná česká a zahraniční literatura, ale i z důvěryhodných internetových zdrojů. Dále byl mým zdrojem i bestseller „Jak lhát se statistikou“ od Darrella Huffa. Tato kniha se stala učebnicí statistiky pro nematematické obory na mnoha univerzitách po celém světě. Vtipnou a poutavou formou provází autor čtenáře různými triky, jejichž cílem je s pomocí dobře vypadajících statistických údajů vytvářet příznivý dojem o skutečnostech, které ve skutečnosti mohou být podstatně jiné. V analytické části své bakalářské práce pracuji s interními informacemi, proto jsou výstupy uváděny v omezené podobě. Zde se snažím ukázat, jak se vyvíjelo fungování firmy a za jakých podmínek. Zjištěné skutečnosti jsem použila v návrhové části práce. V závěru práce stručně rekapituluji výsledky této práce.

Abstract:

The topic of this thesis had been chosen primarily for personal knowledge enrichment and to map present development of day-to-day operation, which I am responsible for. The thesis focuses on basic information concerning the possibilities of use of statistical methods in the field of gastronomy, actually applied on the „Restaurant U Chalupy“ in Žďár nad Sázavou, where I hold the post of duty manager . Due to an application of statistical methods, past 7 years of the day-to-day service, had been evaluated. On the basis of established facts, new recommendation or direct changes for increasing restaurant attendance can be applied in the future. The theoretical part is based on professional Czech and foreign literature sources, as well as on reliable online sources. One of the sources used for this thesis was a bestseller "How to lie with statistics" by Darrell Huff. This book had become a textbook for a non-mathematical statistics courses at many universities throughout the world. By humorous and interesting way, using a various tricks guides the reader to the good-looking statistics with favourable impression of the facts, which in fact may be substantially different. The thesis analyses internal information, therefore the outputs are given in a limited form. Analysed data shows the development of the company itself and conditions under which it had been operated. The conclusion briefly summarizes the goal of this thesis.
