Supply of Restaurant operations

Abstract:

Téma této bakalářské práce je Zásobování restauračních provozů a jejím cílem je zmapovat dodavatelský trh na území hlavního města Prahy a doporučit restauracím optimálního dodavatele zboží. Zjistit, zda může jeden centrální dodavatel uspokojit poptávku restaurací v Praze. V první části se text věnuje uvedení do tématu celé logistiky s přizpůsobením na zásobování, zásoby a jejich řízení a dále historii vývoje stravovacích zařízení na českém území. Druhá a třetí část práce je věnována dodavatelským společnostem a konkrétním restauracím, které od nich odebírají. Při zpracovávání této práce bylo použito analýzy a komparace dodávajících firem a deskripce vztahů a podmínek mezi dodavateli a restauracemi. Informace k deskripci byly získány pomocí rozhovorů, dotazníkového šetření a elektronického dotazování. K otázce jednoho univerzálního dodavatele se drtivá většina respondentů vyjadřuje, že nevyužívá jednoho dodavatele pro vše zboží a pro více než polovinu z nich je nereálné, aby byli zásobováni pouze jedním dodavatelem. Dalším zjištěním je, že restaurace žádají kvalitu, mnohdy i na úkor ceny. Tato práce tedy pojednává celkově o dodavatelsko-odběratelských vztazích v zásobování restaurací na území našeho hlavního města.

Abstract:

The theme of this bachelor thesis is Supply of the restaurant operations. The thesis is focused on maping of the supply market in Prague and it should recommend the restaurants the optimal supply company. The main aim of this thesis is to find out, if one central supplying company is able to gratify the demand of restaurants in Prague. First part of text is devoted to the introduction into the theme of logsistics, directed on supply, supplies, inventory management and history of the restaurant development in Czech territory. Second and third part of this bachelor thesis is about analyzing and comparing particular supply corporations and a description of relationships and terms between the suppliers and their costumers – restaurants. These items of information were acquired by personal interviews, a questionaire and also an online survey. For the question of one central supplying company the most of respondents agree on not using just one supplier for all the goods. For more than half of them is impossible and unreal to have just one. The next interesting finding is that restaurants demand the quality even at an expense of the price. Overall, this thesis looks at supplier-purchaser relations in the capital city area.
