Importance and analysis of gluten in food, gluten-free nutrition

Abstract:

Tato bakalářská práce se zaměřuje na lepek, jeho význam v potravinářství a následně i jeho eliminaci z potravin - bezlepkovou výživu. Práce popisuje jednotlivé složky lepku a následně jejich analýzu. Dále se zabývá diagnostikou zdravotních obtíží souvisejících s lepkem a možnostmi léčby pacientů trpící některou z uvedených obtíží. V závěrečné časti jsou popsány hlavní benefity bezlepkové výživy a případně i její rizika.

Abstract:

This bachelor thesis focuses on gluten, its importance in the food industry, and its subsequent elimination from the food - gluten-free nutrition. The thesis describes individual components of gluten and then their analysis. Furthermore, the thesis deals with the diagnosis of gluten-related health problems and treatment options for patients suffering from any of these problems. In the final part, the main benefits of a gluten-free nutrition are described, as well as possible risks.
