Forgotten entomophagy

Abstract:

Tato diplomová práce se zabývá nutričním složením jedlého hmyzu. V této práci nehodnotíme pouze benefity, ale jsou zohledněny také možná rizika plynoucí z konzumace hmyzu. Druhů jedlého hmyzu existuje přes 2000, v naší práci jsme se zaměřili na 9 druhů, které se nejčastěji konzumují v podmínkách Evropské unie. Teoretická část této práce nabízí kompletní přehled o obsahu makronutrientů i mikronutrientů v jedlém hmyzu. Zaměřuje se převážně na obsah bílkovin a hodnotí také jejich kvalitu a stravitelnost. Teoretická část obsahuje také základní informace o možných rizicích při konzumaci jedlého hmyzu, hlavně o obsahu těžkých kovů. V experimentální části byla provedena chemická analýza vybraných druhů jedlého hmyzu, které jsou v podmínkách Evropské unie běžně chované pro lidskou spotřebu. Každý analyzovaný druh jedlého hmyzu byl získán z několika různých chovů. Následně byl změřen obsah nutričně prospěšných (železo, zinek) a rizikových (kadmium, olovo) prvků.

Abstract:

This diploma thesis deals with nutritional composition of edible insects. In this thesis we do not evaluate only benefits, but also the possible risks of the consumption of insect. There are over 2000 species of edible insects, in our thesis we have focused on the 9 species most commonly consumed in the European Union. The theoretical part of this thesis offers a complete overview of the content of macronutrients and micronutrients in edible insects. It focuses mainly on the protein content and also evaluates it's quality and digestibility. The theoretical part also contains basic information on the possible risks of consuming edible insects, especially heavy metals. Within the experimental part, chemical analysis of selected insect species, which are normally bred for human consumption in European Union conditions, has been performed. Each analyzed species of edible insects was obtained from a few different breeds. Subsequently, the content of nutritionally beneficial (iron, zinc) and risky (cadmium, lead) elements was measured.
