Abstract:
Tato bakalářská práce se zabývá přídatnými látkami v potravinách. Jsou zde popsány obecné informace, legislativa, definice přídatných látek a jejich použití. Práce je zaměřena na vybranou skupinu aditiv, jež tvoří emulgátory, stabilizátory, zahušťovadla, želírující látky a látky zvýrazňující chuť a vůni. V závěru práce jsou popsány i látky, které se nepovažují za potravinářské přídatné látky.
Abstract:
This work deals with the additives in food. There is their general information, legislation, definition of food additives and their utilisation described. This work is mainly focused on a selected group of additives including emulsifiers, stabilizers, thickeners, gelling agents, flavour and flavour enhancers.
