Natural toxic substances in food of plant origin

Abstract:

Přírodní toxické látky se vyskytují ve mnoha potravinách, které člověk konzumuje. Proto se bakalářská práce zabývá povědomím o přírodních toxických látkách v potravinách rostlinného původu a předcházení styku s nimi. Teoretická část se zaměřuje na definování základních pojmů z oblasti toxikologie a poté směřuje k rozdělení zmíněných látek na toxiny a potravinové nesnášenlivosti. U toxinů se zaobírá důležitými skupinami přírodních toxických látek, které jsou hojně přítomny v konzumovaných potravinách a jejich známé zástupce. Praktická část se věnuje zjištění znalostí dospělé populace České republiky o přírodních toxických látkách v potravinách rostlinného původu, a zda předchází kontaktu s nimi v praxi. Výzkum je realizován pomocí dotazníkového šetření, kterého se zúčastnilo 114 respondentů obou pohlaví ve věkovém rozmezí od 18 do 61 let. Z kvantitativní metody vyplývá, že nad 75 % respondentů vykazovalo vědomosti o základních pojmech v oblasti toxikologie. Minimálně 50 % se orientuje v oblasti potravinových nesnášenlivostí stejně tak u potravin, ve kterých se vyskytují přírodní toxické látky. Nad 75 % dospělé dotazované veřejnosti stále nemá dostatečné povědomí o názvech přírodních toxických látek v potravinách rostlinného původu, ale dokážou předcházet jejich konzumaci v praxi. Výsledky jsou zpracovány pomocí popisné statistiky, grafů a tabulek.

Abstract:

Natural toxic substances are found in many foods that a human consumes. Therefore, the bachelor's thesis deals with the awareness of natural toxic substances in foods of plant origin and the prevention of contact with them. The theoretical part focuses on defining basic concepts from the field of toxicology and then aims to divide the mentioned substances into toxins and food intolerances. In toxins, it deals with important groups of natural toxic substances that are abundantly present in consumed foods and their known representatives. The practical part is dedicated to finding out the knowledge of the adult population of the Czech Republic about natural toxic substances in foods of plant origin and whether they prevent contact with them in practice. The research is carried out using a questionnaire survey, which was attended by 114 respondents of both sexes in the age range from 18 to 61 years. It follows from the quantitative method that more than 75 % of the respondents showed knowledge of basic terms in the field of toxikology. At least 50 % are oriented in the field of food intolerancesas well as in foods that contain natural toxic substances. More than 75 % of the adult public surveyed still do not have sufficient awareness of the names of natural toxic substances in foods of plant origin, but they are able to prevent their consumption in practice. The results are processed using descriptive statistics, graphs and tables.
