Artificial sweeteners in foodstuffs

Abstract:

Tato bakalářská práce se zabývá náhradními sladidly používanými v potravinářství. V první části je uvedena charakteristika a členění náhradních sladidel. V této části jsou charakterizována následující sladidla: aspartam, acesulfam K, sukralóza, sacharin, cyklamát, thaumatin a steviosid. Ve druhé části práce jsou uvedeny a rozebrány metody stanovení náhradních sladidel v potravinách a nápojích. Jedná se především o chromatografické a elektrochemické metody.

Abstract:

This thesis deals with the sweeteners used in food industry. The first part is focused on the characterization and division of the sweeteners. In this section are characterized the following sweeteners: aspartame, acesulfame K, sucralose, saccharin, cyclamate, and thaumatin and steviosid. In the second part of the thesis are presented and discussed methods of the determination of the sweeteners in foods and beverages. First of all are presented chromatographic and electrochemical methods.
