Modification and monitoring of properties of doughs with the addition of hydrocolloids measured by farinograph and extensograph

Abstract:

Cílem této diplomové práce bylo sledovat vliv hydrokoloidů (arabská guma a pektin) na reologické vlastnosti pšeničného těsta. V práci bylo popisováno chemické složení mouky a její kvalita, dále vlastnosti hydrokoloidů na pšeničné těsto, reologické vlastnosti pšeničného těsta a způsoby měření reologických vlastností. Vliv hydrokoloidů na pšeničné těsto byl sledován pomocí chemické analýzy. Reologické vlastnosti byly měřeny pomocí farinografu a extenzografu. S přídavkem arabské gumy do těsta se snižovala vaznost vody, zpracovatelnost a mechanická odolnost těsta. Naopak se zvyšovala stabilita a doba vývinu. Z hlediska tažnosti nemá přídavek arabské gumy vliv na těsto. Přídavek pektinu do těsta zvýšil vaznost vody, dobu vývinu i tažnost. Stabilita těsta se zvyšovala do koncentrace 0,5 % (w/w). Zpracovatelnost a mechanická odolnost se s přídavkem pektinu snížila. S přídavkem pektinu i arabské gumy se zvyšovala lepivost těsta.

Abstract:

The aim of this thesis was to monitor the influence of hydrocolloids (gum arabic and pectin) on the rheological properties of wheat flour dough. Chemical properties of flour and quality of flour, properties of hydrocolloids on wheat flour dough, reological properties of wheat flour dough and measurement technique of rheological properties were described in thesis. Influence of hydrocolloids on wheat flour dough was studied by chemical analysis. Rheological properties were measured by the farinograph and the extensograph. The addition of gum arabic on dough decreased water absorbtion, workability and mechanical strength of dough. However dough stability and development time of dough were increased. The addition of gum arabic does not have any effect on dough extensibility. Water absorption, development time of dough and dough extensibility were increased with the addition of apple pectin. Dough stability was increased to the concentration of 0,5 % (w/w). Workability and mechanical strength of dough were decreased with the addition of apple pectin. The dough stickiness was increased with the addition of apple pectin and gum arabic.
