Brno: Mendelova univerzita v Brně, 2018.Cílem této bakalářské práce je identifikovat potenciální oblasti vzniku ztrát a odpadu ve skupině CZ-NACE 10.7 – „Výroba pekařských, cukrářských a jiných moučných výrobků“. V první části práce jsou definovány základní pojmy související s oblastí plýtvání potravinami a procesním řízením. Na tuto část navazuje mapování zpracovatelského průmyslu a vybraného potravinářského oboru. Na základě primárních dat získaných od podniků v daném oboru (pekáren) jsou následně popsány procesy, které probíhají v tomto oboru, a identifikována místa vzniku ztrát. Významný problém těchto podniků souvisí se základní surovinou používanou při výrobě pečiva – moukou, která je rozprášená téměř po celé pekárně.

Brno: Mendel University, 2018.The aim of this bachelor's thesis is to identify any potential areas of losses and waste generation in the CZ-NACE 10.7 group – “Manufacture of bakery and farinaceous products”. The first part of the thesis defines basic terms related to the areas of food waste and process management. This part is followed by the mapping of the processing industry and one selected field of the food industry. Based on the primary data obtained from companies operating in the field (bakeries), the processes carried out in this field are described and the location of losses is identified. A significant problem of these companies is related to the basic raw material used in the manufacture of bread, i.e. flour, which is scattered almost all over the bakery.
