Inhibition of Maillard reaction
Abstract:
Bakalářská práce se věnuje problematice Maillardových rekací a způsobů, jak je inhibovat. V experimentální části se zabývá inhibicí pomocí polyfenolických látek obsažených v petrželi. Jako měřící metoda byla vybrána UV-Vis spektrofotometrie. Touto metodou byl změřen průběh reakce i celkové množství polyfenolických látek.
Abstract:
Bachelor thesis deals with the issue of Maillard reaction and their inhibition. In the experimental part, parsley extracts were used to inhibit non-enzymatic browning. UV-Vis spectrophotometry was chosen to monitor Maillard reaction and the quantity of total polyphenolic substances.
